Aperol Spritz
Ingredients:
3oz Prosecco
2oz Aperol
1 splash Seltzer
Orange Twist
Instructions:
Place ice in a wine or rocks glass. Add Aperol, then chilled Prosecco. Stir gently then top with a splash of seltzer. Garnish with the orange twist.
Notes:
Orange, peach, rhubarb scent. Clean, crisp and refreshing. The three word descriptions of the Aperol Spritz could go on and on. Easy on the eyes and sure to please even those who dislike bitter flavors and sparkling wine. There is something magical in the combination of Aperol and prosecco that just works perfectly together. You would be hard pressed to find anyone who doesn’t enjoy this one.

History:
The Aperol Spritz remains popular both in its country of origin, Italy, as well as in Austria.
The exact origin of the spritz is unknown; however, the earliest known versions were created in the 1800s. During this time, Austria was occupying Italy. The word spritz is even thought to originate from the German word spritzen, “to spray.” The drink stemmed from German soldiers enjoying white wines in Italy, but finding the alcohol content to be too high relative to the beer they normally enjoyed. This led to the occupants diluting their wine with club soda. Eventually, this apertif spread throughout Italy. At some point Aperol was added to this combination with prosecco and the Aperol Spritz was born. Sometimes this category of cocktail is referred to as the “Venetian Spritz.”
Variations:
You could substitute another bitter amaro in place of the Aperol, such as Campari or Cynar. While these variations are good, and definitely worth a try, they just don’t quite compare to the perfect harmony of Aperol and prosecco.

1 third lemon cello .. I use my home made Meyer Lemom Cello.

1 third sparkle… Prosecco, champagne, sparkling wine or soda
